We had Chicken with mushrooms, salad, steamed broccoli and the kiddos had mac and cheese…
First bake boneless skinless chicken breast with green pepper and opinion with a little seasoning salt at 350, make sure you cover it so it steams…cook until the breast is 180 degrees….
While the chicken is cooking make your salad…
Cut up a 2 cups of spinach(you can add in some hearts of romaine if you are not fond of the spinach)..
Mix in some very small minced white onion(they add a great bite) and green pepper…
Then drizzle 1 teaspoon of extra virgin olive oil and one tablespoon of red wine vinegar…
Next when the chicken is done take it out and let it cool…..
While it is cooling get a frying pan add a little water, garlic, salt and pepper to mushrooms, sauté them until golden brown, not to long though or they will lose the nutrients….
At the same time steam some fresh broccoli……
And tada,…..dinner…
The kiddos loved it and PS they didn’t eat the mac and cheese, they ate the broccoli and salad like crazy, lol…
And all of it was about 200 calories and so yummy!!!

A new start........
So I am going to try a new recipe for every night Ben is gone, and every recipe we choose were 500 calories or less…..….Tonight was Lacie’s choice which was stake salad and stuffed red peppers and 445 calories….
